Honey fried chicken3 pounds cut-up chicken
3/4 cup Weaver's Honey
3/4 to 1 cup buttermilk baking mix
2 teaspoons dry mustard
1/2 teaspoon paprika
Salt and pepper to taste
Vegetable oil
Directions:
Coat chicken with honey; set aside; Combine buttermilk,
baking mix, mustard, paprika, salt, and pepper; Dredge
chicken in mixture; Heat 1/3 inch oil to 375°F in a 12-inch
skillet over medium heat; Carefully place chicken in hot oil
and cook about 5 minutes or until underside is golden; Turn
chicken pieces and cook about 5 minutes; turning as
needed; Reduce heat to low and cook 7 to 10 minutes
longer or until chicken tests done and juices run clear;
Remove chicken; drain on paper towels; Repeat with
remaining chicken pieces; Makes 4 to 6 servings.
TIP
Chicken can be browned in hot oil
placed on baking sheet and baked at 350°F for 20 to 30
minutes or until chicken test done and juices run clear. |
Honey apple peanut butter spread1/2 cup Weaver's honey
1 cup natural-style chunky peanut butter
1/2 cup natural-style applesauce
1/2 cup raisins
Directions:
Combine all ingredients in a small bowl; mix well;
Serve as a spread for sandwiches, toast, crackers, rice
cakes, bagels or bagel chips, or flour tortillas; Use as a dip
for fresh fruit slices, such as apples, pears, or oranges;
Makes about 2-1/2 cups. Refrigerate leftovers. |
